Seniors First BC is a non-profit charitable organization committed to protecting the legal rights of older adults, increasing access to justice for older adults, informing the public about elder abuse, and providing supportive programs for older adults who have been abused.

Bringing you our favourite family recipes, household staples, and straight-up comfort food is one of the joys we take in sharing with the Brightside community, and it gives us a chance for a bit of fun as well. We’re all human and we all like food! We hope you enjoy our culinary contributions.

Liam Griffin is Brightside’s Manager of Communications and Fundraising. With long-standing ties to Vancouver’s progressive Ukrainian-Canadian community, he has been known in days past to don the traditional attire of Ukraine and hit the stage for some Ukrainian folk dance. He is found much more frequently behind a camera than in front of it.

Liam brings you a simple and tasty borscht recipe. Easy and quick, it’s hard to go wrong with borscht.

Recipe: Baba’s Borscht (Ukrainian Beet Soup)

Ingredients

Instructions

  1. Scrub the young beets thoroughly but do not peel them.

     

  2. Rinse some of the leaves and stalks under running water and set aside.

     

  3. Dice beets and stalks, add water, salt, onions and dill.

     

  4. Boil for about 10-15 minutes.

     

  5. Add cut leaves, peas and carrots and boil a few more minutes.

     

  6. Add cubed potatoes.

     

  7. Boil all vegetables until they are tender but do not overcook.

     

  8. Add more water if the soup is too thick.

     

  9. Serve with a dollop of sour cream and a sprinkling of fresh dill.

     

Baba tip: Try adding kidney beans for some vegetarian-friendly protein, or substitute vegetable stock for beef/chicken stock for a more traditional flavour.
